Easy fruit tart
It's called a Galette, but you can think of this recipe as a tart that doesn’t even require a tart pan, and one in which you can use any fruits you like (or whatever
For a 25 cm tart (approx. 1 kg total):
Dough:
250 g flour
30 g sugar
180 g butter
Put the flour, sugar, and cold, cubed butter in a bowl and rub everything together with your fingers until you get a crumbly, sandy texture. You can also do this in a food processor or stand mixer if you prefer.
55 g cold water
10 g lemon juice
Add the cold water and lemon juice (or apple cider vinegar) and mix just until the dough starts to come together. Shape it into a disc, wrap it in plastic wrap, and refrigerate for about 1 hour.
Filling:
500 g fruit
30 g sugar
10 g cornstarch
OR
~ 30 g maple syrup
Roll out the chilled dough on a sheet of parchment paper into a disc about 30 cm in diameter.
If you're using smaller fruits or if you've cut them into smaller pieces, mix them with the sugar and cornstarch. I sliced some peaches and simply poured maple syrup over them. Fold the edges of the dough over the fruit and lightly brush the crust with a bit of beaten egg.
Bake at 175°C (fan on) for about 50 minutes, and serve warm or cold - however you like it. It goes perfectly with a scoop of vanilla ice cream!
