Easy Summer Fruit Traybake

A delicious summer cake recipe with lots of fruit, super fluffy, easy to make, and — best of all — no kitchen scale needed?
Yes, it’s totally possible!

For a 20x30 cm tray:

  • 3 pcs Eggs

  • 1 cup (200g) Sugar

Put the eggs and sugar in a bowl (preferably a stand mixer bowl) and mix for about 5 minutes.

  • 3/4 cup (180g) Oil

  • 1 cup (240g) Milk

  • 1 teaspoon (6g) Vanilla Extract

Add these to the egg mixture and mix for another 30 seconds.

  • 3 cups (420g) Flour

  • 1.5 packets (15g) Baking Powder

  • 1 kg Fruit

Mix the flour and baking powder, then add them to the wet ingredients. Incorporate with a spatula and pour half the batter into a 20x30 cm tray lined with parchment paper on the bottom. Add 500g of fruit, the remaining batter, and then the remaining 500g of fruit on top.

Bake the cake at 175°C (no fan) for about 50 minutes, and slice it once it has cooled.
